FOLDING,LAYING AND CHANGING THE TABLE CLOTH IN RIGHT WAY


HYEEE GUYS!!
On this week, we have learn about how to FOLDING,LAYING and also CHANGING the table cloth in fine dining restaurant. Sometime, hotel staff will change the table cloth in front of the guest.



What Are the Functions of a Tablecloth?



Decoration
*Tablecloths decorate a table and can be formal or informal. They are available in bold patterns, solid colors and thousands of other patterns and styles.


Protection
*Tablecloths protect tables from food and drink spills and surface scratches.


Materials
*Tablecloths are available in fabric, paper, and plastic. Popular fabrics include linen, cotton and polyester. If you would like a disposable material, paper is a good choice.


Warning
*Always follow the washing instructions for your fabric tablecloth. Some materials should only be dry cleaned, and many tablecloths require ironing, so check before purchasing to make sure you understand the care and cleaning involved.




So, we have to do it properly as shown below. This week we have to carry out a practical test on how to lay and change a table cloth. 
let's we find out how to laying the table cloth:


Procedure of laying table cloth





5 step:
  1. - firstly, Place the table cloth centre of the table
  2. -then,open it carefully
  3. - next, Place your every finger on every side of folding cloth
  4. - Laying it on the table
  5. - lastly, Alter to neat them


Procedure of changing the table cloth

4 step:
  1. - Take on side of the table cloth and pull them above 
  2. - Place the table cloth that are already folded above the old table cloth 
  3. - Place your finger between the table cloth to easy you while laying 
  4. - Unfold the table cloth and pull it slowly while take the old table cloth already with a finger


Fold table cloth

5 step to fold it:
  1. - First, we have to fold it into 2
  2. - Second fold another one at one side, and do again at the other side
  3. - Place it on the table.
  4. - Fold both side to the center and give some space at the center
  5. - Lastly, fold both side again to the center.

BUT!!!!!

TABLE SETTING

TWO TYPES OF TABLE SETTING ARE USUALLY USED IN RESTAURANT

I hope we'll meet again in this episode.. okay today we would like to share about table setting. there have a 2 types of table setting:

  1. table d'hote setting 
  2. a la carte setting


So for your information this is a TABLE D'HOTE setting :




>Table d'hôte cover requires the cutlery and flatware for the whole meal to be laid out before the first course is served.

>A table d'hôte menu is a fixed price menu, with a set meal offering a number of courses.

> With table d'hôte, surplus tableware is removed after the customer has placed their order. This is called the change cover.


> The reasons for this are: cutlery that is not required will only clutter the table, removing the cutlery can act as a memory prompt as to what the customers have ordered and it portrays a professional image to the customer.

>The cutlery is laid in the order the guest eats the courses- from the outside in.

Start from right..

1. Soup spoon
2. Table spoon
3. Table knife
4. Dinner plate
5. Table fork
6. Appetizer fork
7. Bb plate
8. Dessert knife
9. Place a goblet above the table knife
10. Place a dessert spoon and fork above the dinner plate.



on the other hand is the A'LA CARTE setting:



>Place settings are called covers (French = couverts).

> The cover includes the place for each guest, and their crockery, tableware, glassware, cutlery and napkin. An à la carte menu offers a wide choice of individual dishes. 

>With an à la carte cover the cutlery, flatware and crockery for each course are laid just before each course is served. 

>The traditional cover laid prior to the start of the meal is that suitable for hors d'oeuvre (the first course in a classic menu sequence).

Laying an à la carte cover:
1. Put the side plate down to mark the cover position.
2. Lay the fish knife and fork.
3. Place the wine glass above the tip of the knife.
4. Move the side plate to the left.
6. Place the napkin.

Okay today we would like to share some knowledge and new skills about how to handle the food using the service gear.



this is how to handle the service gear..

#Usually this skill are used in French service or Russian (silver service).



#Where the waiter/waitress was standing to the left of the guest and holding 
the platter of food in his left hand, the server shows each guest the food and then using a serving fork and spoon, he dishes up the desired portion onto the guests plate. He then returns the unserviced portions to the kitchen.


SERVICE GEAR IN FRUIT CUTTING



While you may bring in mucho bucks with a fine dining restaurant you will also pay out more money than if you were running a more casual restaurant, such as a dinner or café .There are three main areas of focus with a fine dining restaurant: the menu, service and atmosphere.

In this case, the waiter should have a high level of skill in fruit cutting and have to provide a good hygiene in their service because in this service they have to show how their cut the fruit in front of guest. So this is the reason why they use a service gear to handle the fruit cutting.
 I’ll show how to use/handle the fruit cutting with service gear when cut a various type of  fruit such as banana, kiwi, apple, orange and others.

PREPARE THE SALAD USING SERVICE GEAR AND MANNERS.



Here my group will show about how to handle service gear while prepare a salad.
my class was learn with our lecturer about how to handle service gear while make a salad.
You can use carrot, iceberg lettuce, tomato cherry and so on, but before that you should to cut the vegetable in suitable size.

In addition, you also can use vinaigrette or lemon juice to add taste more delicious :D
